Key Features of the Brady Family Traditional Irish ham range:

Brady Family are proud to employ age old production techniques. Tradition and heritage are key fundamentals in our production process. The production is not rushed at any stage - we ensure that our product meets consumer’s demand for quality, hand made products in this age of mass production:

  • Brady Family hams are all made using only young Irish pork and all carry the Bord Bia Quality Assurance Mark.
  • All hams are slowly cured on the bone, using a unique traditional curing recipe for several days. This gives all Brady Family hams their unique taste and flavour.
  • Each cured leg is carefully deboned by our own craft butchers and then formed by hand into an individual ham for steam cooking in its own rind. Each individual ham comes from its own individual pork leg.
  • The ham is steam cooked for 8-10 hours with the rind on, which ensures succulence, flavour and texture. No added water is retained in the final product.
  • A combination of all of the stages in the curing, preparation and cooking process of Brady Family hams, gives them their unique flavour, taste and texture.
