Baked Ham with Raisin Cider Sauce

300ml / 1/2 pint cider
1 tbsp of cornflower
25-50g / 1-2oz raisins (chopped if large)
A pinch of salt
6-8 whole doves
A small piece of cinnamon stick
Knob of butter


  • Buy a Brady Family Traditional Cooked Ham joint from the deli, reheat according to instructions and serve hot with this unusual sauce:
  • Blend 300ml / 1/2 pint cider with a tablespoonful of honey and a dessertspoon of cornflour, then put into a small saucepan with 25-50g / 1-2oz raisins (chopped if large), a pinch of salt, 6-8 whole cloves and a small piece of cinnamon stick, season.
  • Bring gently up to the boil, stir and then simmer for 10 minutes, stirring frequently.
  • Remove the spices and stir in a knob of butter just before serving
